Tony Bish is NZ’s only Chardonnay exclusive producer. Such is his love of this variety and its ability to achieve greatness in Hawke’s Bay, his production is anchored entirely around this noble grape.
"The palate ha an underlying freshness with acid poise, and the wine flows along a fine-textured, dry line leading to a sustained finish with toasty oak. This is a fresh, bright, elegant Chardonnay with lively citrussy fruit enriched by layers of creamy, nutty and buttery flavours, finishing fine and dry. Match with roasted and grilled poultry and pork dishes over the next 4 years. 80% clone 15 from Bridge Pa Triangle, vines 10 y.o., and 20% Mendoza clone fruit from the Upper Dartmoor, vines 15 y.o.. The wine is 50% barrel-fermented and 50% tank-fermented with oak staves to 13.0% alc. After 6 months maturation, the barrel portion is placed in tank and the tank portion placed in barrel.
