The Nessus Shiraz is sourced from the winemakers vineyards at the southern end of McLaren Vale, close to the seaside town of Port Willunga. The rich, heavy clay soils and warm Summer days produce a deeply coloured, full flavoured wine with soft, silky tannins. Shiraz fruit for the Nessus is crushed immediately after delivery to the winery, and the skin and juice mix is then allowed to warm naturally over the coming days. Fermentation is kept cool in order to retain the primary fruit characters in the wine.
Ripe and rich, it’s all about black fruits – mulberry and blackberry with some rum and raisin thrown in supported by older oak. The palate is then user friendly – plump, ripe and fleshy delivering good flavour and generosity for everyday drinking with a spicy meaty finish that draws you in to a second glass.
